Day 16: Monterey Chicken


It was an amazingly beautiful day here. Drew, Ike and I spent about 2 hours outside throwing tennis balls and laying in the grass on a blanket and reading. And so that explains the late hour of my post today. I had not originally planned to do this as one of my days but it just seemed like such a good springtime meal. Lots of color and flavor! The chicken is a pinterest recipe, the pasta salad is not.

The recipe for the chicken is as follows:

Ingredients:
4 boneless chicken breasts
1 cup colby & jack cheese
1 14 oz. can Rotel tomatoes canned with green chillis added (drain)
1/4 Cup BBQ Sauce
1/4 cup real bacon bits
Green Onions
Pepper

Season chicken with pepper and grill (we have to use our trusty George Foreman because we aren't allowed to have a grill, boo!). Preheat oven to 400 and cover each breast (after grilled) with BBQ sauce, cheese, tomatoes, green onions, bacon bits. And then place in the oven just long enough to melt the cheese. Easy!


As for the pasta salad it is an Everyday Manna special. For those who don't know Everyday Manna is a cooking show from back home that my mamaw watches religiously. Lisa Smith is the host and I must admit she is like Paula Deen to me, she can make about anything look good. When we were in Bluefield I was able to get that channel from back home and saw Lisa make this pasta salad that looked so scrumptious and it is!
